Pea Soup Recipe
I love making soups out of left-over veg - I can't see food go to waste so I'm quite inventive with how to use veg that's remaining, but soup is the easiest, quickest and often most delicious option!!
This super simple recipe came out of having a big family meal where there was an entire pan of peas that were left-over...
Ingredients
About 1kg of peas, defrosted
1 table spoon miso paste
1 teaspoon vegan stock - I use vegan Bouillon
Approx 1/2 litre hot water
Method
The peas should ideally be defrosted but not over-cooked
Mix the miso and stock with about 1/2 litre hot water
Take about 3/4 of the peas and put them in a blender with about half a cup of the water and stock mix and blend
Combine all ingredients in a big pan and heat for a few minutes
Serve and enjoy!
